Ingredients

  • 2 cups Rice flour
  • 2 teaspoons Baking powder
  • 0.5 teaspoons Salt
  • 1 cup Reduced-fat milk
  • 2 large Eggs
  • 1 cup Low-fat cheese (shredded)
  • 1 tablespoon Honey
  • 1 tablespoon Olive oil
  • 2 tablespoons Chives (chopped)

Directions

Step 1

Preheat your oven to 350°F (175°C) and grease a 9x5 inch loaf pan with a bit of olive oil or non-stick cooking spray.

Step 2

In a large mixing bowl, combine the rice flour, baking powder, and salt. Stir these dry ingredients until they are well mixed.

Step 3

In a separate bowl, whisk together the reduced-fat milk, eggs, honey, and olive oil until smooth.

Step 4

Gradually add the wet mixture into the dry ingredients, mixing gently until just combined. Be careful not to overmix to ensure the bread stays light.

Step 5

Fold in the shredded low-fat cheese and chopped chives, distributing them evenly throughout the batter.

Step 6

Pour the batter into the prepared loaf pan, spreading it out evenly with a spatula.

Step 7

Place the loaf pan in the preheated oven and bake for about 40-45 minutes or until the top is golden brown and a toothpick inserted into the center comes out clean.

Step 8

Once baked, remove the pan from the oven and let the bread cool in the pan for around 10 minutes.

Step 9

Carefully remove the bread from the pan and place it on a wire rack to cool completely before slicing and serving.
