Ingredients

  • 250 grams whole wheat pasta
  • 200 grams low-fat cottage cheese
  • 100 grams low-fat mozzarella cheese
  • 30 grams parmesan cheese
  • 1 tablespoon olive oil
  • 2 units garlic cloves
  • 100 grams baby spinach
  • 250 milliliters fat-free milk
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 0.5 teaspoon cracked black pepper
  • 0.5 teaspoon salt

Directions

Step 1

Bring a large pot of salted water to a boil. Add the whole wheat pasta and cook until al dente, following the package instructions. Reserve 100 ml of the pasta cooking water, then drain the pasta and set aside.

Step 2

In a large pan, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1-2 minutes until fragrant, making sure not to burn the garlic.

Step 3

Add the baby spinach to the pan and cook until it wilts, about 2-3 minutes.

Step 4

In a blender, combine the low-fat cottage cheese, fat-free milk, and half of the low-fat mozzarella cheese. Blend until smooth and creamy.

Step 5

Pour the cheese mixture into the pan with the spinach. Stir in the oregano, basil, black pepper, and salt. Let the mixture simmer for about 5 minutes, stirring occasionally.

Step 6

Add the cooked pasta and the reserved pasta water to the cheese sauce. Toss well to coat the pasta thoroughly in the sauce.

Step 7

Sprinkle the remaining mozzarella and all of the parmesan cheese over the pasta. Cover the pan with a lid and let it sit for 2 minutes on low heat until the cheese melts.

Serve the pasta hot, garnished with additional cracked black pepper if desired.
