Ingredients

  • 250 grams Whole wheat pasta (penne or spaghetti)
  • 500 ml Low-fat milk
  • 100 grams Low-fat shredded mozzarella cheese
  • 30 grams Grated Parmesan cheese
  • 2 tablespoons All-purpose flour
  • 1 tablespoon Olive oil
  • 2 Garlic cloves, minced
  • 0.5 teaspoons Salt
  • 0.5 teaspoons Ground black pepper
  • 2 tablespoons Fresh parsley, chopped
  • 1 liters Water

Directions

Step 1

Bring 1 liter of water to a boil in a large pot. Add a generous pinch of salt and cook the whole wheat pasta according to package instructions (approximately 8-10 minutes) until al dente. Drain the pasta and set it aside.

Step 2

In a medium saucepan, heat 1 tablespoon of olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant, but not browned.

Reduce the heat to low and stir in 2 tablespoons of all-purpose flour. Cook the flour with the garlic for 1-2 minutes, stirring constantly, to form a roux.
