Ingredients

  • 300 grams whole wheat penne pasta
  • 1 tablespoon extra virgin olive oil
  • 3 garlic cloves
  • 1 medium onion
  • 1 medium red bell pepper
  • 1 medium zucchini
  • 1 cup low-fat ricotta cheese
  • 1.5 cups low-fat mozzarella cheese
  • 0.5 cup grated Parmesan cheese
  • 400 grams canned diced tomatoes
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 0.5 teaspoon red pepper flakes
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper

Directions

Step 1

Preheat the oven to 375°F (190°C).

Step 2

Cook the whole wheat penne pasta according to the package instructions. Drain and set aside.

Heat the olive oil in a large skillet over medium heat.

Mince the garlic and chop the onion, red bell pepper, and zucchini into small pieces.

Add the garlic and onion to the skillet and sauté until the onion is translucent, about 3-4 minutes.
