  • 2 medium Aubergines (eggplants)

  • 1 handful Basil leaves
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.5 teaspoon Dried oregano

Directions

Step 1

Preheat your oven to 200°C (400°F).

Step 2

Slice the aubergines into 1 cm (1/2 inch) thick rounds.

Step 3

Lay the aubergine slices on a baking sheet and lightly brush both sides with olive oil.

Step 4

Bake the aubergine slices in the preheated oven for 15 minutes, flipping halfway through, until they are tender and lightly golden.
