Ingredients

  • 2.5 cups All-purpose flour
  • 1 packet Active dry yeast
  • 1 cup Warm water
  • 0.5 cup Low-fat milk
  • 1 teaspoon Salt
  • 1 tablespoon Sugar
  • 1 Egg white
  • 0.75 cup Grated low-fat cheese (such as low-fat cheddar)
  • 0.5 cup Baking soda
  • 4 cups Water (for baking soda bath)
  • 0 Cooking spray

Directions

Step 1

In a large mixing bowl, combine warm water and sugar, stirring to dissolve. Sprinkle the yeast on top and let it sit for about 5 minutes, or until foamy.

Step 2

Add the salt and low-fat milk to the yeast mixture, then slowly incorporate the flour, half a cup at a time, until a dough begins to form.

Step 3

Transfer the dough to a lightly floured surface and knead for about 5-7 minutes, until smooth and elastic. If dough is sticky, add a little more flour as needed.

Step 4

Place the dough in a lightly oiled bowl, cover with a clean cloth, and let it rise in a warm place for about 1 hour, or until doubled in size.

Step 5

Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper. Lightly spray the parchment with cooking spray.

Step 6

In a large saucepan, bring the 4 cups of water to a boil and add the baking soda. Reduce the heat to a simmer.

Step 7

Once the dough has risen, punch it down and divide it into 8 equal portions. Roll each portion into a long rope, about 20 inches in length.

Step 8

Shape each rope into a pretzel and gently place each one in the simmering baking soda bath for 30 seconds. Carefully remove with a slotted spoon and place onto the prepared baking sheet.

Step 9

Brush each pretzel with beaten egg white and sprinkle with grated low-fat cheese.

Step 10

Bake in the preheated oven for about 15-20 minutes, or until the pretzels are golden brown.

Step 11

Remove from oven and allow to cool slightly on a wire rack before serving.
