  • 12 pieces Whole wheat lasagna noodles
  • 2 cups Low-fat ricotta cheese

  • 0.5 cups Freshly grated Parmesan cheese
  • 1 large Egg
  • 3 cups Fresh spinach, chopped
  • 4 cups Marinara sauce (low sodium)
  • 2 cloves Garlic, minced
  • 1 teaspoon Dried basil
  • 1 teaspoon Dried oregano
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 1 tablespoon Olive oil

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Cook the lasagna noodles according to the package instructions until al dente, then drain and lay flat on a clean surface to prevent sticking.

Step 3

In a large skillet, heat olive oil over medium heat. Sauté the minced garlic for 1 minute until fragrant, then add the chopped spinach. Cook for 2-3 minutes until wilted and set aside.

In a mixing bowl, combine the low-fat ricotta cheese, egg, dried basil, dried oregano, salt, and black pepper. Mix until smooth, then fold in the cooked spinach.
