Ingredients

  • 8 pieces Low-fat corn tortillas
  • 2 cups, shredded Reduced-fat cheddar cheese

  • 2 cups Enchilada sauce
  • 1 can Olive oil spray
  • 1 medium, finely chopped Onion
  • 2 cloves, minced Garlic
  • 1 medium, chopped Green bell pepper
  • 0.25 cup, chopped Cilantro
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Preheat the oven to 350°F (175°C).

Step 2

Lightly spray a 9x13 inch baking dish with olive oil spray.

Step 3

In a non-stick pan over medium heat, apply a light spray of olive oil. Add the chopped onion, garlic, and green bell pepper. Sauté for about 5 minutes, until the vegetables are tender.
