Ingredients

  • 1 cup Rice flour
  • 0.5 cup Tapioca flour
  • 2.5 cups Water
  • 0.5 teaspoon Salt
  • 2 tablespoons Scallions, finely chopped
  • 0.5 cup Silken tofu, crumbled
  • 2 tablespoons Soy sauce
  • 1 tablespoon Hoisin sauce
  • 1 teaspoon Sesame oil
  • 0.5 cup Bean sprouts
  • 1 for greasing Cooking spray
  • 1 teaspoon Sesame seeds, toasted

Directions

Step 1

In a mixing bowl, combine rice flour, tapioca flour, water, and salt. Whisk until a smooth batter forms. Let the batter rest for 10 minutes.

Step 2

Spray a shallow baking dish or a steaming tray with cooking spray to prevent sticking.

Step 3

Pour a thin layer of the batter into the greased tray, tilting gently to spread evenly. The layer should be very thin, almost translucent.

Step 4

Place the tray in a steamer, cover, and steam over medium-high heat for about 3-4 minutes until the noodle sheet becomes translucent and cooked through.

Step 5

Carefully remove the tray from the steamer. Sprinkle chopped scallions and crumbled silken tofu evenly over the steamed noodle sheet. Add a small layer of bean sprouts along one end of the sheet.

Step 6

Using a spatula, gently roll the rice noodle sheet from the end with the bean sprouts, forming a loose roll.

Step 7

Transfer the roll to a plate and continue with the remaining batter, stacking the rolls as you go.

Step 8

For the sauce, mix soy sauce, hoisin sauce, and sesame oil in a small bowl.

Step 9

Slice each roll into 2-inch sections and drizzle the sauce over the top.

Step 10

Sprinkle with toasted sesame seeds before serving. Serve warm with extra sauce on the side if desired.
