Ingredients

  • 4 cups water
  • 1 cup skim milk
  • 0.5 teaspoons salt
  • 1 cup yellow cornmeal (polenta)
  • 0.5 cup low-fat sharp cheddar cheese, shredded
  • 0.25 teaspoons black pepper
  • 2 tablespoons fresh parsley, chopped (optional for garnish)

Directions

Step 1

In a medium saucepan, combine 4 cups of water with 1 cup of skim milk and 0.5 teaspoons of salt. Heat over medium-high heat until the liquid just begins to boil.

Step 2

Gradually whisk in 1 cup of yellow cornmeal, also known as polenta, reducing the heat to low. Continue to whisk constantly to prevent lumps from forming.

Step 3

Once the polenta begins to thicken after a couple of minutes, switch to a wooden spoon. Stir the mixture frequently to avoid sticking, and cook for about 20 minutes or until the polenta reaches a creamy consistency.

Step 4
