Ingredients

  • 500 grams boneless, skinless chicken thighs
  • 4 stalks green onions (negi)
  • 60 ml low sodium soy sauce
  • 60 ml mirin
  • 30 ml sake
  • 2 tablespoons sugar
  • 1 teaspoon garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 4 cups rice
  • 600 ml water
  • 1 teaspoon sea salt
  • 1 teaspoon vegetable oil

Directions

Step 1

Cut the chicken thighs into 2-inch pieces and set aside.

Step 2

Prepare the tare sauce by combining the soy sauce, mirin, sake, sugar, minced garlic, and grated ginger in a small saucepan. Simmer over medium heat until slightly thickened, about 5 minutes. Allow it to cool.

Step 3

Thread the chicken pieces onto skewers, leaving small gaps between each piece for even cooking.

Step 4

Finely chop the green parts of the green onions and reserve them for garnish. Cut the white parts into 2-inch lengths.

Step 5

Toss the whole green onions (negi) with a drizzle of vegetable oil and a pinch of sea salt.

Step 6

Light a charcoal grill and let the coals reach medium-high heat.

Step 7

Place the chicken skewers and onions on the grill, turning occasionally, until the chicken is cooked through and slightly charred, about 10-12 minutes.

Step 8

Simultaneously, grill the green onions until they are slightly charred, about 7-9 minutes.

Step 9

Brush the grilled chicken with the prepared tare sauce during the last few minutes of grilling to enhance the flavor.

Step 10

While grilling, cook the rice. Rinse and drain the rice, then combine it with water in a rice cooker or a pot. Cook until the rice is tender.

Step 11

To serve, divide the cooked rice among bowls. Place grilled chicken skewers and onions over the rice.

Step 12

Garnish with the reserved chopped green onion tops. Serve hot and enjoy the delightful flavors of low-fat grilled Yakitori Don.
