Ingredients

  • 1 cup Glutinous rice
  • 4 cups Water
  • 3 tablespoons Unsweetened cocoa powder
  • 2 cups Low-fat milk
  • 0.25 cup Sugar
  • 1 teaspoon Vanilla extract
  • 0.5 teaspoon Salt
  • 1 teaspoon Stevia or other low-calorie sweetener
  • 1 cup Water

Directions

Step 1

Rinse the glutinous rice under cold water until the water runs clear. This helps to remove excess starch and prevents the rice from becoming too sticky.

Step 2

In a medium-sized pot, combine 4 cups of water and the rinsed glutinous rice. Bring to a boil over medium-high heat.

Step 3

Once boiling, reduce the heat to low and let the rice simmer, uncovered, for about 15 minutes or until the rice is fully cooked and has absorbed most of the water. Stir occasionally to prevent the rice from sticking to the bottom of the pot.

Step 4

In a separate bowl, mix the unsweetened cocoa powder with 1 cup of water to form a smooth paste. This will ensure that the cocoa powder dissolves evenly without lumps.

Step 5

Add the cocoa paste, low-fat milk, sugar, vanilla extract, and salt to the pot with the cooked rice.

Step 6

Stir continuously over low heat for about 10 minutes, allowing the cocoa to incorporate into the rice mixture and thicken slightly. The porridge should be creamy and chocolatey.

Step 7

Taste and adjust the sweetness by adding stevia or another low-calorie sweetener as needed. Remember to stir well after adding to distribute the sweetener evenly.

Step 8

Once the desired consistency is reached, remove the pot from heat. Let the champorado cool slightly as it will continue to thicken upon standing.

Step 9

Serve the low-fat champorado warm in bowls. Optionally, drizzle extra low-fat milk or a sprinkle of additional cocoa powder on top before serving for added richness.
