Ingredients

  • 1 head Large cauliflower
  • 500 ml Low-fat milk
  • 2 tablespoons Cornstarch
  • 100 grams Reduced-fat cheddar cheese, grated
  • 1 teaspoon Dijon mustard
  • 0.5 teaspoon Garlic powder
  • 0.5 teaspoon Freshly ground black pepper
  • 0.5 teaspoon Salt
  • 1 tablespoon Chopped fresh parsley

Directions

Step 1

Preheat your oven to 200°C (390°F).

Step 2

Cut the cauliflower into florets and discard the tough stem. Rinse the florets under cold water.

Step 3

Bring a large pot of lightly salted water to a boil, and add the cauliflower florets. Cook for about 5-7 minutes until just tender. Drain and set aside.

Step 4

In a medium saucepan over medium heat, whisk together the low-fat milk and cornstarch. Stir continuously until the mixture begins to thicken, about 5 minutes.

Step 5

Reduce the heat to low. Add the grated reduced-fat cheddar cheese to the thickened milk mixture, stirring until the cheese has melted smoothly into the sauce.

Step 6

Stir in the Dijon mustard, garlic powder, salt, and black pepper, ensuring everything is well combined.

Step 7

Place the drained cauliflower florets into a baking dish and pour the cheese sauce evenly over the florets.

Step 8

Bake in the preheated oven for 20-25 minutes until the top is golden brown and bubbling.

Step 9

Garnish with chopped fresh parsley before serving warm.
