Ingredients

  • 1 pound lean flank steak
  • 2 tablespoons low sodium soy sauce
  • 3 tablespoons lime juice
  • 2 tablespoons orange juice
  • 3 pieces garlic cloves, minced
  • 1 teaspoon cumin powder
  • 1 teaspoon chili powder
  • 0.5 teaspoon black pepper
  • 1 for greasing cooking spray
  • 4 pieces low-fat whole wheat tortillas
  • 1 cup cooked brown rice
  • 1 cup black beans, drained and rinsed
  • 1 cup fresh pico de gallo
  • 0.5 cup low-fat shredded cheddar cheese
  • 0.5 cup fat-free Greek yogurt
  • 0.25 cup fresh cilantro, chopped
  • 1 piece avocado, sliced (optional)

Directions

Step 1

In a medium bowl, combine the soy sauce, lime juice, orange juice, minced garlic, cumin, chili powder, and black pepper. Mix well to make the marinade.

Step 2

Place the flank steak in a resealable plastic bag or a shallow dish. Pour the marinade over the steak, ensuring all sides are covered. Seal the bag or cover the dish, and refrigerate for at least 1 hour, or up to 4 hours for maximum flavor infusion.

Step 3

Preheat a grill or a grill pan over medium-high heat. Lightly grease the grill or pan with cooking spray.

Step 4

Remove the steak from the marinade and let the excess marinade drip off. Grill the steak for about 3-4 minutes per side, or until it reaches your desired level of doneness.

Step 5

Transfer the steak to a cutting board and let it rest for 5 minutes. Thinly slice the steak against the grain into strips.

Step 6

Warm the tortillas on a skillet or in a microwave until pliable.

Step 7

Assemble each burrito by layering approximately a quarter of the steak strips, 1/4 cup of cooked brown rice, 1/4 cup of black beans, 1/4 cup of pico de gallo, 2 tablespoons of shredded cheddar cheese, 2 tablespoons of Greek yogurt, and some chopped cilantro onto each tortilla.

Step 8

Carefully roll up each tortilla, folding in the sides and rolling to close. Optionally, add sliced avocado before rolling.

Step 9

Serve the burritos immediately, with additional pico de gallo and Greek yogurt on the side if desired.
