Ingredients

  • 1 cup Jasmine rice
  • 2 cups Water
  • 1 cup Pineapple chunks (fresh or canned in juice, not syrup)
  • 0.5 cup Red bell pepper, diced
  • 0.25 cup Green onion, sliced
  • 2 cloves Garlic, minced
  • 1 teaspoon Coconut oil
  • 1 tablespoon Light soy sauce
  • 0.25 teaspoon Ground allspice
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 2 tablespoons Fresh cilantro, chopped

Directions

Step 1

Rinse the jasmine rice under cold water until the water runs clear to remove excess starch and prevent the rice from becoming sticky.

Step 2

In a medium saucepan, combine the rinsed rice and 2 cups of water. Bring to a boil over medium-high heat. Once boiling, cover the saucepan with a lid, reduce the heat to low, and let the rice simmer for about 15 minutes or until all the water is absorbed and the rice is tender. Remove from heat and let it stand covered for 5 minutes.

While the rice is cooking, heat 1 teaspoon of coconut oil in a large non-stick skillet over medium heat.
