Ingredients

  • 1.5 cups All-purpose flour
  • 1 teaspoon Baking powder
  • 0.5 teaspoon Baking soda
  • 0.25 teaspoon Salt
  • 0.5 cup Unsweetened applesauce
  • 0.5 cup Granulated sugar
  • 0.25 cup Packed light brown sugar
  • 1 teaspoon Vanilla extract
  • 1 large Egg white
  • 0.5 cup Miniature candy-coated chocolate pieces

Directions

Step 1

Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.

Step 2

In a medium bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt. Set aside.

Step 3

In a large bowl, combine the unsweetened applesauce, granulated sugar, packed light brown sugar, and vanilla extract. Beat with an electric mixer on medium speed until well blended.

Step 4

Add the egg white to the applesauce mixture and beat until smooth.

Step 5

Gradually add the dry ingredients to the wet mixture, mixing on low speed just until combined. Scrape down the sides of the bowl as needed.

Step 6

Gently fold in the miniature candy-coated chocolate pieces with a spatula until evenly distributed throughout the dough.

Step 7

Using a tablespoon or a small cookie scoop, drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart.

Step 8

Bake in the preheated oven for 9 to 11 minutes or until the edges are lightly golden. The centers will remain slightly soft.

Step 9

Remove from the oven and let the cookies cool on the baking sheets for 2 minutes before transferring them to a wire rack to cool completely.

Step 10

Store cookies in an airtight container at room temperature for up to one week.
