Ingredients

  • 1 medium head Cabbage
  • 1 medium Onion
  • 2 pieces Green chilies
  • 1 teaspoon Mustard seeds
  • 1 teaspoon Cumin seeds
  • 0.5 teaspoon Turmeric powder
  • 0.5 teaspoon Red chili powder
  • 1 teaspoon Salt
  • 1 teaspoon Coriander powder
  • 1 tablespoon Cooking oil
  • 10 leaves Curry leaves
  • 2 tablespoons Cilantro

Directions

Step 1

Finely chop the cabbage and rinse it thoroughly under running water. Drain and set aside.

Step 2

Chop the onion and slice the green chilies.

Step 3

Heat a non-stick pan over medium heat and add the oil.

Step 4

Once the oil is hot, add the mustard seeds and cumin seeds. Let them splutter for a few seconds.

Step 5

Add the sliced green chilies and curry leaves. Sauté for another minute.

Step 6

Add the chopped onion to the pan and sauté until the onions are translucent, about 2-3 minutes.

Step 7

Mix in the turmeric powder, red chili powder, coriander powder, and salt. Stir for a few seconds until the spices are fragrant.

Step 8

Add the chopped cabbage to the pan, turning the heat to medium-high. Stir well so that the cabbage is coated with the spices.

Cover the pan with a lid and let the cabbage cook for around 10 minutes, stirring occasionally, until it becomes tender but not mushy.

Remove the lid and stir-fry for another 2-3 minutes on medium-high heat to allow excess moisture to evaporate.

Garnish with freshly chopped cilantro and mix well.
