Ingredients

  • 250 grams All-purpose flour
  • 1 teaspoons Baking powder
  • 0.25 teaspoon Salt
  • 100 grams Low fat margarine
  • 80 grams Granulated sugar
  • 1 teaspoon Vanilla extract
  • 1 large Egg
  • 2 tablespoons Low fat milk

Directions

Step 1

Preheat your oven to 180°C (350°F) and line two baking sheets with parchment paper.

Step 2

In a medium bowl, mix together the all-purpose flour, baking powder, and salt. Set aside.

Step 3

In a large mixing bowl, beat the low fat margarine and granulated sugar together until the mixture becomes light and fluffy. This should take about 3 minutes using an electric mixer.

Step 4

Add the vanilla extract and the egg to the margarine and sugar mixture. Beat until well combined.

Step 5

Add the flour mixture to the wet ingredients in three parts, alternating with the low fat milk. Begin and end with flour. Mix just until combined after each addition, being careful not to overmix the dough.

Step 6

Turn the dough out onto a lightly floured surface and roll it out to approximately 1/4 inch thick.

Step 7

Use a cookie cutter to cut out cookies and place them onto the prepared baking sheets, leaving space between each cookie.

Step 8

Bake in the preheated oven for 10 to 12 minutes, or until the edges are lightly golden.

Step 9

Remove from the oven and let the cookies cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.

Step 10

Once cooled, store the butterkeks in an airtight container for up to a week.
