Ingredients

  • 1 pound Ground turkey
  • 1 tablespoon Olive oil
  • 1 medium Yellow onion, diced
  • 3 cloves Garlic cloves, minced
  • 1 tablespoon Chili powder
  • 1 teaspoon Ground cumin
  • 1 teaspoon Paprika
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Tomato paste
  • 0.5 cup Low sodium chicken broth
  • 12 leaves Butter lettuce leaves
  • 1 cup Cherry tomatoes, quartered
  • 1 large Avocado, diced
  • 0.25 cup Cilantro, chopped
  • 1 large Lime, cut into wedges

Directions

Step 1

Heat the olive oil in a large skillet over medium heat.

Step 2

Add the diced onion and minced garlic to the skillet and sauté for about 3-4 minutes until the onion is translucent.

Step 3

Add the ground turkey to the skillet and cook, breaking it apart with a spatula, for about 6-7 minutes or until it is browned and cooked through.

Step 4

Stir in the chili powder, ground cumin, paprika, salt, and black pepper, ensuring the turkey is well-coated with spices.

Step 5

Add the tomato paste and stir well, cooking for another 1-2 minutes.

Step 6

Pour in the chicken broth and bring to a simmer. Cook for an additional 3-4 minutes until the liquid has reduced and the mixture is slightly thickened.

Step 7

Remove the skillet from heat and prepare the lettuce wraps.

Step 8

To assemble each taco, lay out a butter lettuce leaf, and spoon some of the ground turkey mixture into the center.

Step 9

Top with a few quarters of cherry tomatoes, diced avocado, and a sprinkle of chopped cilantro.

Step 10

Serve with lime wedges on the side for squeezing over the top before eating.
