Ingredients

  • 2 lbs brisket flat
  • 2 tbsp smoked paprika
  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • 0.5 tsp cayenne pepper
  • 1 tsp black pepper, ground
  • 1 tbsp kosher salt
  • 2 tbsp brown sugar
  • 1 cup low sodium beef broth
  • 1 cup barbecue sauce (low sugar)

Directions

Step 1

Trim excess fat from the brisket flat. Preheat your smoker to 250°F.

Step 2

In a small bowl, combine smoked paprika, garlic powder, onion powder, cayenne pepper, black pepper, kosher salt, and brown sugar to create a rub.

Step 3

Generously rub the spice mixture all over the brisket flat, ensuring all sides are covered.

Step 4

Place the brisket in the smoker on the grill grates and smoke for approximately 4 hours, or until the internal temperature reaches 185°F.

Step 5

Remove the brisket from the smoker and let it rest for 10 minutes. Cut the brisket into 1-inch cubes.

Step 6

Increase the smoker temperature to 275°F.

Step 7

Place the brisket cubes into a foil pan. Pour the low sodium beef broth and half of the low sugar barbecue sauce over the cubes, tossing gently to coat.

Step 8

Return the pan to the smoker and cook for another 1 hour, stirring occasionally, until the cubes are tender.

Step 9

Add the remaining barbecue sauce, tossing to ensure all burnt ends are well-covered.

Step 10

Smoke for an additional 15 to 20 minutes to caramelize the sauce on the cubes.

Step 11

Remove from the smoker and allow to cool for a few minutes before serving. Enjoy your low fat burnt ends as a main course or a delightful appetizer.
