Ingredients

  • 1 tablespoon olive oil
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 4 cups broccoli, chopped into florets
  • 4 cups low-sodium vegetable broth
  • 1 medium russet potato, peeled and diced
  • 1 cup unsweetened almond milk (or any low-fat milk alternative)
  • 0.5 teaspoons salt
  • 0.25 teaspoons black pepper
  • 0.25 teaspoons ground nutmeg
  • 1 teaspoon lemon juice

Directions

Step 1

Heat the olive oil in a large pot over medium heat.

Step 2

Add the diced onion and sauté for 3-4 minutes until softened.

Step 3

Stir in the minced garlic and cook for an additional 1 minute, being careful not to let it burn.

Step 4

Add the chopped broccoli, diced potato, and vegetable broth to the pot.

Step 5

Bring the mixture to a boil, then reduce the heat to a simmer. Cover the pot and let it cook for 20 minutes, or until the broccoli and potatoes are soft and tender.

Step 6

Remove the pot from the heat and let it cool slightly.

Step 7

Using an immersion blender, blend the soup directly in the pot until it is smooth and creamy. Alternatively, you can blend the soup in batches using a countertop blender, taking care not to overfill and allowing steam to escape.

Step 8

Stir in the almond milk, salt, black pepper, and ground nutmeg. Return the pot to low heat and gently reheat the soup, stirring occasionally, until warmed through.

Step 9

Taste and adjust seasoning if needed. Stir in the lemon juice just before serving for a bright pop of flavor.

Step 10

Serve the bisque hot, garnished with fresh herbs if desired, and enjoy!
