Ingredients

  • 4 cups Broccoli florets
  • 4 cups Low sodium vegetable broth
  • 1 whole Medium onion
  • 2 cloves Garlic
  • 1 medium Carrot
  • 1 medium Celery stalk
  • 1 cup Low-fat milk
  • 1 cup Reduced-fat sharp cheddar cheese
  • 1 tablespoon Olive oil
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 2 tablespoons Cornstarch
  • 2 tablespoons Water

Directions

Step 1

Chop the onion, garlic, carrot, and celery into small pieces.

Step 2

In a large pot, heat the olive oil over medium heat. Add the chopped onion, garlic, carrot, and celery. Sauté for about 5 minutes until the vegetables are soft.

Add the broccoli florets and vegetable broth to the pot. Increase heat to high and bring to a boil.
