Ingredients

  • 4 cups Broccoli florets
  • 1 cup Almonds, blanched
  • 1 medium Carrot, chopped
  • 1 large Celery stalk, chopped
  • 1 medium Onion, chopped
  • 2 cloves Garlic, minced
  • 4 cups Low-sodium vegetable broth
  • 1 cup Almond milk, unsweetened
  • 1 tablespoon Olive oil
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 1 tablespoon Lemon juice
  • 2 tablespoons Fresh parsley, chopped

Directions

Step 1

Heat a large pot over medium heat and add the olive oil.

Step 2

Add the chopped onion, chopped carrot, and chopped celery to the pot. Sauté for about 5 minutes, stirring occasionally until the vegetables begin to soften.

Add the minced garlic and sauté for another minute until fragrant.

Step 4

Add the broccoli florets, and pour in the low-sodium vegetable broth. Bring to a boil.

Once boiling, reduce the heat to a simmer. Cover the pot and let the vegetables cook for about 10-15 minutes until the broccoli is tender.
