Ingredients

  • 500 grams Brinjal (Eggplant)
  • 1 medium Onion
  • 1 large Tomato
  • 1 inch piece Ginger
  • 3 cloves Garlic
  • 1 whole Green Chili
  • 10 leaves Curry Leaves
  • 0.5 teaspoons Mustard Seeds
  • 0.5 teaspoons Cumin Seeds
  • 0.5 teaspoons Turmeric Powder
  • 1 teaspoons Coriander Powder
  • 0.5 teaspoons Red Chili Powder
  • 1 teaspoons Salt
  • 1 cup Water
  • 2 tablespoons Fresh Coriander Leaves
  • 1 teaspoons Oil (preferably canola or olive)

Directions

Step 1

Wash the brinjal thoroughly and cut it into cubes. Soak them in salted water to prevent discoloration.

Step 2

Finely chop the onion, tomato, ginger, garlic, and green chili.

Step 3

Heat 1 teaspoon of oil in a non-stick pan over medium heat.

Step 4

Add the mustard seeds and let them crackle. Add cumin seeds and curry leaves, sauté for a few seconds.

Step 5

Add chopped onion and sauté until they become translucent.

Step 6

Add the chopped ginger, garlic, and green chili. Sauté for another 2 minutes until the raw smell disappears.

Step 7

Add the chopped tomato and cook for 3-4 minutes until they soften.

Stir in the turmeric powder, coriander powder, and red chili powder. Mix well.

Drain the brinjal cubes from the water and add them to the pan. Stir to coat with the spice mixture.

Add salt and water, mix well, cover the pan, and let it simmer on low heat for about 15-20 minutes until the brinjal is cooked through.

Check occasionally and stir to prevent sticking to the bottom.

Once the brinjal is tender, turn off the heat, sprinkle freshly chopped coriander leaves, and mix gently.

Step 13

Serve hot with rice or flatbread.
