Ingredients

  • 4 pieces Whole wheat tortillas
  • 8 large Egg whites
  • 2 cups Fresh spinach
  • 1 cup Cherry tomatoes
  • 0.5 cup Low-fat shredded cheese
  • 1 medium Avocado
  • 2 stalks Green onions
  • 1 spray Olive oil cooking spray
  • 0.25 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 0 to taste Hot sauce (optional)

Directions

Step 1

Chop the spinach, cherry tomatoes, avocado, and green onions into small pieces. Set aside.

Step 2

Spray a non-stick skillet lightly with olive oil cooking spray and heat over medium-low heat.

Step 3

In a mixing bowl, whisk the egg whites with salt and black pepper until combined. Pour them into the preheated skillet.
