  • 2 tablespoons red wine vinegar
  • 1 tablespoon olive oil
  • 2 tablespoons fresh parsley, chopped
  • 1 package natural hog casings

Directions

Step 1

Rinse the natural hog casings thoroughly in cold water to remove any salt. Soak them in fresh water for at least 30 minutes. Meanwhile, prepare the sausage mix.

Step 2

In a large bowl, combine lean ground turkey and lean ground pork together, mixing well with clean hands or a sturdy spoon.

Step 3

Peel and finely mince the garlic cloves. Add the minced garlic to the meat mixture.

Sprinkle paprika, ground cumin, dried oregano, black pepper, and sea salt over the meat.
