Ingredients

  • 1 pound Lean beef stew meat
  • 1 tablespoon Olive oil
  • 1 medium Onion
  • 2 large Carrots
  • 2 Celery stalks
  • 3 Garlic cloves
  • 2 cups Beef broth, low sodium
  • 2 tablespoons Tomato paste
  • 1 tablespoon Worcestershire sauce
  • 1 Bay leaf
  • 1 teaspoon Thyme, dried
  • 0.5 teaspoon Pepper
  • 0.5 teaspoon Salt
  • 2 tablespoons Parsley, fresh

Directions

Step 1

Trim any excess fat from the beef stew meat. Cut into bite-sized pieces if necessary.

Step 2

Heat the olive oil over medium-high heat in a large, heavy-bottomed pot or Dutch oven.

Step 3

Add the beef to the pot in batches, searing on all sides until browned, about 5 minutes per batch. Remove beef to a plate and set aside.

Step 4

In the same pot, add chopped onion, carrots, and celery. Sauté for about 5 minutes until the onion becomes translucent.

Add minced garlic and cook for another minute until fragrant.

Return the beef to the pot, along with any juices that have accumulated on the plate.
