Ingredients

  • 10 Phyllo pastry sheets
  • 200 grams Low-fat feta cheese
  • 300 grams Fresh spinach
  • 2 large Egg whites
  • 100 ml Skim milk
  • 1 can Olive oil spray
  • 2 tablespoons Fresh dill
  • 1 teaspoon Black pepper
  • 0.5 teaspoon Salt
  • 2 tablespoons Sesame seeds

Directions

Step 1

Preheat your oven to 180°C (350°F) and line a baking tray with parchment paper.

Step 2

Wash and dry the spinach, then roughly chop it.

Step 3

In a large bowl, crumble the low-fat feta cheese and combine it with the chopped spinach, egg whites, salt, black pepper, and freshly chopped dill. Mix well until all ingredients are evenly distributed.

Step 4

Lay one sheet of phyllo on a clean surface and lightly spray with olive oil spray. Place another sheet on top and spray again. Repeat until you have 5 layers.

Step 5

Spread half of the spinach-feta mixture along one edge of the phyllo stack, leaving some space at the sides.

Gently roll the phyllo from the filling side to the other, creating a log shape. Tuck in the edges as you roll.

Repeat this process with the remaining filling and phyllo sheets to create a second log.

Transfer the rolls to the prepared baking tray and lightly brush the tops with skim milk. Sprinkle sesame seeds on top to garnish.
