Ingredients

  • 2 cups All-purpose flour
  • 2 teaspoons Baking powder
  • 0.5 teaspoon Salt
  • 0.5 cup Granulated sugar
  • 1 cup Non-fat Greek yogurt
  • 0.25 cup Unsweetened applesauce
  • 1 unit Egg white
  • 1 teaspoon Vanilla extract
  • 1.5 cups Fresh blueberries
  • 1 teaspoon Lemon zest
  • 0.25 cup Powdered sugar
  • 1 tablespoon Water

Directions

Step 1

Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.

Step 2

In a large mixing bowl, combine the flour, baking powder, and salt.

Step 3

In another bowl, whisk together the sugar, Greek yogurt, applesauce, egg white, and vanilla extract until smooth.

Step 4

Gradually add the wet ingredients to the dry ingredients, mixing until just combined to form a dough.

Step 5

On a floured surface, roll the dough into a rectangle approximately 12 x 8 inches in size.

Step 6

In a small bowl, mix the fresh blueberries with lemon zest, then spread the mixture evenly over the dough rectangle.

Step 7

Carefully roll the dough from the longer side to form a log. Press the seam gently to seal.

Step 8

Transfer the rolled dough onto the prepared baking sheet, seam side down.

Step 9

Bake in the preheated oven for about 25 minutes, or until golden brown and firm to the touch.

Step 10

Allow the roll to cool for 10 minutes on the baking sheet.

Step 11

While the roll is cooling, mix the powdered sugar and water in a small bowl to create a simple glaze.

Step 12

Drizzle the glaze over the slightly cooled blueberry roll.

Step 13

Slice and serve warm or at room temperature for a delectable low-fat treat!
