Ingredients

  • 4 sheets Low-fat puff pastry sheets
  • 100 grams Reduced-fat feta cheese
  • 150 grams Spinach leaves
  • 1 medium, finely chopped Onion
  • 2 cloves, minced Garlic
  • 1 teaspoon Olive oil
  • 0.25 teaspoon Black pepper
  • 1 large Egg white

Directions

Step 1

Preheat the oven to 200°C (400°F). Line a baking sheet with parchment paper.

Step 2

In a non-stick skillet over medium heat, add the olive oil. Once hot, add the finely chopped onion and garlic, sautéing until the onion is translucent.

Step 3

Add the spinach to the skillet and cook until it is wilted and most of the moisture has evaporated, about 3-4 minutes. Remove from heat and let cool slightly.

Step 4

In a mixing bowl, crumble the reduced-fat feta cheese and mix it with the cooked spinach mixture. Season with black pepper. Stir until well combined.

Step 5

Lightly flour a clean surface and roll out each puff pastry sheet to smooth out any creases.

Step 6

Cut each sheet into equal squares, about 4x4 inches each. You should have a total of 16 squares.

Step 7

Place a tablespoon of the spinach and feta mixture onto the center of each pastry square.

Step 8

Brush the edges of the pastry with a little water, then fold the squares in half to form triangles, pressing the edges firmly to seal.

Step 9

For a glossy finish, lightly beat the egg white and brush the tops of the pastry bites.

Step 10

Arrange the pastry bites on the prepared baking sheet, leaving some space between each.

Step 11

Bake in the preheated oven for 20-25 minutes, or until the pastry is golden brown and puffed.

Step 12

Let them cool for a few minutes before serving. Enjoy your low-fat bladerdeeghapjes warm or at room temperature.
