Ingredients

  • 4 cups fresh blackberries
  • 0.5 cup granulated sugar
  • 1 tablespoon cornstarch
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 0.25 teaspoon salt
  • 0.75 cup unsweetened almond milk
  • 0.25 cup unsweetened applesauce
  • 1 teaspoon vanilla extract
  • 1 teaspoon lemon zest

Directions

Step 1

Preheat your oven to 375°F (190°C). Lightly grease a 9-inch baking dish with non-stick cooking spray.

Step 2

In a medium bowl, combine the blackberries, 1/4 cup of the granulated sugar, and cornstarch. Mix gently until the blackberries are evenly coated. Pour the blackberry mixture into the prepared baking dish and spread it out in an even layer.

Step 3

In a separate bowl, whisk together the flour, baking powder, salt, and the remaining 1/4 cup of sugar.

Step 4

In another small bowl, mix together the almond milk, applesauce, and vanilla extract. Stir the wet mixture into the dry ingredients until just combined, being careful not to overmix.

Step 5

Using a spoon, drop dollops of the batter over the blackberry mixture, covering most of the surface while leaving a few gaps for the berries to peek through.

Step 6

Sprinkle the lemon zest evenly over the top of the batter for a bright, citrusy touch.

Step 7

Place the baking dish in the preheated oven and bake for 35-40 minutes, or until the topping is golden brown and the blackberry filling is bubbling.

Step 8

Remove the cobbler from the oven and allow it to cool for 10-15 minutes before serving. Enjoy warm or at room temperature, optionally topped with a dollop of low-fat yogurt or a scoop of light vanilla ice cream.
