  • 0.25 teaspoon Salt
  • 120 milliliters Low-fat buttermilk
  • 60 milliliters Applesauce (unsweetened)
  • 2 large Egg whites
  • 1 teaspoon Vanilla extract
  • 100 grams Granulated sugar
  • 150 grams Cherries (canned in juice, drained and chopped, reserve some for garnish)
  • 180 grams Low-fat whipped topping
  • 20 grams Dark chocolate (70% cocoa, shaved or grated)
  • 45 milliliters Cherry juice (from the canned cherries)

Directions

Step 1

Preheat your oven to 175°C (350°F) and grease a 7-inch round cake pan. Line the bottom with parchment paper for easy removal.

Step 2

In a medium-sized mixing bowl, whisk together the flour, cocoa powder, baking powder, baking soda, and salt until well combined.

In another bowl, mix the low-fat buttermilk, applesauce, egg whites, vanilla extract, and granulated sugar until smooth.

Gradually add the wet ingredients to the dry ingredients, folding gently with a spatula until just combined. Do not overmix.
