Ingredients

  • 0.5 cup unsweetened applesauce
  • 0.5 cup granulated sugar
  • 2 teaspoons vanilla extract
  • 1 large egg
  • 0.5 cup low-fat buttermilk
  • 1 cup powdered sugar
  • 1 tablespoon unsweetened cocoa powder
  • 2 tablespoons water

Directions

Step 1

Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.

In a medium bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt. Set aside.

Step 3

In a mixing bowl, combine the unsweetened applesauce and granulated sugar. Beat until smooth and well combined.

Mix in the vanilla extract and the egg, whisking until fully incorporated.

Gradually add the dry ingredients to the wet mixture, alternating with the low-fat buttermilk, beginning and ending with the dry ingredients. Mix until just combined.

Allow the icing to set completely before serving. Store in an airtight container for up to three days.
