Preheat your oven to 180°C (350°F) and line two baking sheets with parchment paper.
In a medium saucepan, bring the water to a boil and add salt and olive oil. Stir well.
Once the water mixture is boiling, remove from heat and gradually add in the tapioca starch, stirring constantly with a wooden spoon until well incorporated.
