Ingredients

  • 8 slices stale bread (French baguette or similar)
  • 2 tablespoons unsalted butter
  • 2 tablespoons granulated sugar
  • 1 teaspoon ground cinnamon
  • 1 teaspoon vanilla extract
  • 1 tablespoon water

Directions

Step 1

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

Step 2

In a small saucepan, melt the unsalted butter over low heat. Once melted, remove from heat and add the vanilla extract and water. Stir to combine.

Step 3

In a shallow bowl, mix the granulated sugar and ground cinnamon well.

Step 4

Take each slice of stale bread and lightly brush one side with the melted butter mixture using a pastry brush.

Step 5

Immediately after brushing with butter, dip or sprinkle the buttered side of the bread into the cinnamon sugar mixture, ensuring even coverage.

Step 6

Place the slices, sugared side up, onto the prepared baking sheet. Ensure they are not overlapping to allow even baking.

Step 7

Bake in the preheated oven for 12-15 minutes, or until the bread slices are golden brown and crisp to the touch.

Step 8

Once done, remove from the oven and allow the biscocho to cool on the pan for a few minutes, then transfer to a wire rack to cool completely. Serve once cooled, or store in an airtight container for up to a week.
