  • 250 grams Turkey sausage
  • 1 medium head Cabbage
  • 500 grams Sauerkraut
  • 1 large Onion
  • 2 medium Carrots
  • 3 units Garlic cloves
  • 2 tablespoons Tomato paste
  • 3 units Bay leaves
  • 5 units Allspice berries
  • 500 milliliters Low-sodium chicken broth
  • 20 grams Dried mushrooms
  • 1 tablespoon Vegetable oil
  • 1 teaspoon Black pepper
  • 1 teaspoon Salt

Directions

Step 1

Rinse the dried mushrooms in warm water and soak them in a cup of hot water for 30 minutes. Drain and chop finely.

Step 2

Cut the lean pork loin into bite-sized cubes and slice the turkey sausage into thin rounds.

Step 3

Chop the cabbage, core and finely shred it. Drain and rinse the sauerkraut.

Step 4

Dice the onion and slice the carrots into thin rounds. Mince the garlic cloves.

Step 5

In a large pot, heat the vegetable oil over medium heat. Add the onions and garlic, sauté until soft and translucent, about 5 minutes.

Step 6

Add the pork cubes to the pot and brown them on all sides. Then add the turkey sausage and cook for another 5 minutes.

Step 7

Incorporate the sauerkraut, fresh cabbage, and carrot slices into the pot, stirring well to combine.

Step 8

Add the chopped dried mushrooms, tomato paste, bay leaves, and allspice berries to the pot.

Step 9

Pour in the chicken broth and the water from the soaked mushrooms, mix well.

Step 10

Season the stew with the salt and black pepper. Bring the mixture to a boil, then reduce the heat to low and let it simmer for about 1.5-2 hours, stirring occasionally.

Step 11

Taste and adjust seasoning if necessary. Remove the bay leaves and allspice berries before serving.

Step 12

Serve hot with a side of crusty whole-grain bread or boiled potatoes if desired.
