In a large non-stick pan, heat the ghee over medium heat. Once melted, add the besan (gram flour).
Roast the besan continuously, stirring constantly to avoid burning, until it emits a nutty aroma and turns golden brown, which should take approximately 15-20 minutes.
Lower the heat and gradually add the skimmed milk to the roasted besan, stirring continuously to form a smooth mixture without lumps.
Continue to cook the mixture on low heat until all the milk is absorbed and the mixture thickens.
Add powdered jaggery to the mixture. Stir well until the jaggery melts and blends thoroughly into the mixture. This should take around 5 minutes.
Mix in cardamom powder, chopped almonds, and chopped pistachios. Cook for another 2-3 minutes and then remove from heat.
Allow the mixture to cool slightly until it is comfortable to touch but still warm.
Take small portions of the mixture and shape them into round balls (ladoos) using your hands.
Place the ladoos on a plate and let them cool completely to set.
Once cooled, store the ladoos in an airtight container for up to a week.
