Ingredients

  • 100 grams Besan (Gram Flour)
  • 1 medium, finely chopped Onion
  • 2 medium, pureed Tomato
  • 1 finely chopped Green Chili
  • 1 teaspoon Ginger-Garlic Paste
  • 0.5 teaspoon Turmeric Powder
  • 0.5 teaspoon Cumin Seeds
  • 1 teaspoon Coriander Powder
  • 0.5 teaspoon Red Chili Powder
  • 0.5 teaspoon Garam Masala
  • 0.75 teaspoon Salt
  • 80 grams Low-Fat Yogurt
  • 500 ml Water
  • 1 teaspoon Cooking Oil
  • 2 tablespoons, chopped Fresh Coriander Leaves

Directions

Step 1

In a bowl, whisk the besan with 50 ml of water to form a smooth paste, ensuring there are no lumps. Set aside.

Step 2

Heat 1 teaspoon of cooking oil in a non-stick pan over medium heat. Add cumin seeds and allow them to splutter.

Step 3

Add the finely chopped onion and sauté until golden brown.

Step 4

Stir in the ginger-garlic paste and chopped green chili. Cook for another minute until the raw aroma dissipates.

Step 5

Add the tomato puree, turmeric powder, coriander powder, red chili powder, and salt. Cook this mixture until the oil starts to separate from the masala, roughly 5-7 minutes.

Reduce the heat and add the besan paste to the pan, stirring continuously to prevent lumps from forming.

Slowly pour in the remaining water and bring the mixture to a boil, stirring occasionally.

Step 8

Mix in the low-fat yogurt and continue to cook on a medium-low flame for another 10 minutes, allowing the flavors to blend and the curry to thicken.

Step 9

Once the besan curry reaches your desired consistency, add garam masala and stir well. Adjust seasoning if needed.

Step 10

Garnish with freshly chopped coriander leaves and serve hot with steamed rice or phulkas.
