Ingredients

  • 1 can (14 oz) fat-free sweetened condensed milk
  • 0.5 cup light coconut milk
  • 1 tablespoon cornstarch
  • 0.75 cup unsweetened desiccated coconut
  • 0.5 teaspoon coconut extract
  • 0.5 cup unsweetened shredded coconut
  • 15 pieces whole cloves
  • 1 as needed for greasing butter or cooking spray

Directions

Step 1

Lightly grease a large plate with butter or cooking spray and set aside.

Step 2

In a medium saucepan, combine the fat-free sweetened condensed milk, light coconut milk, and cornstarch.

Step 3

Whisk the mixture over medium heat until the cornstarch is fully dissolved and there are no lumps. Continue stirring to prevent sticking and burning.

Step 4

Once smooth, add the unsweetened desiccated coconut and coconut extract to the saucepan, stirring continuously.
