Ingredients

  • 250 g beetroot, cooked and grated
  • 100 g wholemeal flour
  • 100 g rolled oats
  • 1 tsp baking powder
  • 1 tsp cinnamon powder
  • 80 ml honey
  • 50 ml unsweetened apple sauce
  • 100 ml low-fat milk
  • 1 tsp vanilla extract
  • 2 egg whites
  • 1 tsp lemon zest

Directions

Step 1

Preheat your oven to 180°C (350°F) and line a 20cm x 20cm (8 inch x 8 inch) baking pan with parchment paper.

Step 2

In a large mixing bowl, combine the wholemeal flour, rolled oats, baking powder, and cinnamon powder.

In another bowl, whisk together the honey, unsweetened apple sauce, low-fat milk, vanilla extract, and egg whites until well combined.

Add the grated beetroot and lemon zest to the wet ingredients and mix thoroughly.
