Ingredients

  • 2 medium Fresh beetroot
  • 2 cups Whole wheat flour
  • 0.5 cup Low-fat plain yogurt
  • 0.25 cup Water
  • 1 tablespoon Olive oil
  • 1 teaspoon Salt
  • 0.5 teaspoon Cumin powder

Directions

Step 1

Peel and chop the beetroots into large chunks. Add them to a pot and cover with water. Bring to a boil and cook for 10-15 minutes, or until tender.

Step 2

Drain the cooked beetroots and allow them to cool slightly. Then, blend them into a smooth puree using a blender or food processor.

Step 3

In a large mixing bowl, combine the beetroot puree, whole wheat flour, low-fat yogurt, water, olive oil, salt, and cumin powder.

Step 4

Mix the ingredients together with your hands or a spatula until they form a smooth and pliable dough. If the dough is too sticky, add a little more flour as needed.

Step 5

Divide the dough into 8 equal-sized balls. Roll each ball into a thin round tortilla using a rolling pin, about 6-7 inches in diameter.

Step 6

Heat a nonstick skillet over medium heat. Once hot, place a rolled-tortilla in the skillet. Cook for 1-2 minutes on each side, or until lightly browned and cooked through. Repeat for all tortillas.

Step 7

Serve the beet tortillas warm, as a delicious and colorful wrap or side.
