Ingredients

  • 4 fillets White fish fillets (such as cod or haddock)
  • 150 grams All-purpose flour
  • 30 grams Cornstarch
  • 1 teaspoon Baking powder
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 250 milliliters Light beer
  • 0 Non-stick cooking spray
  • 0 for serving Lemon wedges

Directions

Step 1

Preheat your oven to 425°F (220°C). Place a wire rack on a baking sheet and lightly spray it with non-stick cooking spray.

Step 2

Pat the fish fillets dry with paper towels. Season both sides with salt and pepper.

Step 3

In a large bowl, combine the flour, cornstarch, baking powder, salt, and black pepper.

Step 4

Gradually whisk in the light beer until the batter is smooth and free of lumps. The batter should be thick enough to coat the back of a spoon.

Step 5

Dip each fish fillet into the batter, coating it thoroughly. Allow the excess batter to drip off before placing the fillet on the prepared wire rack.

Step 6

Lightly spray the tops of the coated fish with non-stick cooking spray to help it crisp up in the oven.

Step 7

Bake in the preheated oven for 15-20 minutes, or until the coating is golden brown and the fish flakes easily with a fork.

Step 8

Remove from the oven and let cool slightly before serving.

Step 9

Serve the beer-battered fish with lemon wedges and your choice of low-fat tartar sauce or vinegar.
