Ingredients

  • 250 grams Lean beef (such as sirloin or tenderloin)
  • 200 grams Firm beancurd (tofu)
  • 150 grams Button mushrooms
  • 3 cloves Garlic
  • 1 inch Fresh ginger
  • 2 tablespoons Low sodium soy sauce
  • 1 tablespoon Oyster sauce
  • 1 teaspoon Sesame oil
  • 1 teaspoon Cornstarch
  • 3 tablespoons Water
  • 1 tablespoon Olive oil
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 2 pieces Scallions (green parts only)

Directions

Step 1

Start by preparing the ingredients. Slice the lean beef into thin strips against the grain for tenderness.

Step 2

Cut the firm beancurd into 1-inch cubes and slice the button mushrooms thinly.

Step 3

Mince the garlic and finely grate the fresh ginger.

Step 4

In a bowl, combine the cornstarch and water to create a slurry and set aside.

Step 5

In a separate small bowl, mix together the low sodium soy sauce, oyster sauce, and sesame oil.

Step 6

Heat the olive oil in a large non-stick pan or wok over medium-high heat.

Step 7

Add the minced garlic and grated ginger, stir-frying for about 30 seconds until fragrant.

Step 8

Add the beef strips to the pan, season with a pinch of salt and black pepper, and stir-fry until just browned, about 2-3 minutes. Remove the beef from the pan and set aside.

Step 9

In the same pan, add the mushrooms and a splash of water to prevent sticking. Stir-fry until the mushrooms are softened, about 3-4 minutes.

Step 10

Carefully add the cubed beancurd to the pan and stir gently to avoid breaking them.

Step 11

Pour the soy sauce mixture over the beancurd and mushrooms, stirring to coat evenly.

Step 12

Return the beef to the pan and pour the cornstarch slurry over the mixture, stirring constantly until the sauce thickens and coats all the ingredients, about 1-2 minutes.

Step 13

Taste and adjust seasoning with salt and pepper if needed.

Step 14

Garnish the dish with sliced green parts of scallions before serving.

Step 15

Serve hot with steamed rice or as part of a low-fat, balanced meal.
