Ingredients

  • 200 grams lean beef sirloin
  • 250 grams udon noodles
  • 500 ml low-sodium beef broth
  • 2 tablespoons soy sauce
  • 1 tablespoon mirin
  • 1 teaspoon fresh ginger, grated
  • 2 cloves garlic, minced
  • 100 grams baby spinach
  • 1 medium carrot, thinly sliced
  • 2 stalks spring onions, sliced
  • 1 teaspoon sesame oil
  • 1 teaspoon sesame seeds

Directions

Step 1

Start by slicing the lean beef sirloin into thin strips and set aside.

Step 2

Bring a pot of water to a boil, add udon noodles, and cook according to package instructions, usually about 8–10 minutes. Drain and set aside.

Step 3

In a large pan, heat the sesame oil over medium heat. Add the minced garlic and grated ginger; sauté for about 30 seconds until fragrant.

Step 4

Add the sliced beef into the pan and cook for 2–3 minutes until just browned.

Step 5

Pour in the low-sodium beef broth, soy sauce, and mirin into the pan, stirring to combine. Bring the mixture to a gentle simmer.

Step 6

Add the sliced carrot to the pan and cook for another 3 minutes until just tender.

Step 7

Add the cooked udon noodles into the broth, followed by the baby spinach. Let it simmer for 2 minutes until the spinach wilts.

Step 8

Taste and adjust seasoning if necessary. Add sliced spring onions and gently stir everything together.

Step 9

Remove from heat and serve hot, garnishing each bowl with a sprinkle of sesame seeds.
