Ingredients

  • 1 pound Lean beef sirloin tips
  • 1 tablespoon Olive oil
  • 1 large Onion
  • 3 cloves Garlic
  • 3 cups Low-sodium beef broth
  • 2 tablespoons Worcestershire sauce
  • 2 tablespoons Soy sauce (low sodium)
  • 2 tablespoons Cornstarch
  • 2 tablespoons Water
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.5 teaspoon Dried thyme
  • 2 tablespoons Fresh parsley

Directions

Step 1

Trim any visible fat from the beef sirloin tips and cut them into bite-sized pieces.

Step 2

In a large skillet or Dutch oven, heat the olive oil over medium-high heat.

Step 3

Add the beef tips in batches to avoid overcrowding. Sear them on all sides until browned, about 5-7 minutes for each batch. Remove and set aside.

Step 4

Chop the onion and mince the garlic cloves.

Step 5

In the same skillet, lower the heat to medium, and add the chopped onion. Sauté until the onions become translucent, about 5 minutes.

Step 6

Add the minced garlic and sauté for another minute until fragrant.

Step 7

Return the beef tips to the skillet. Add the low-sodium beef broth, Worcestershire sauce, soy sauce, salt, pepper, and dried thyme.

Step 8

Bring the mixture to a gentle simmer. Cover and cook for about 1-1.5 hours on low heat, stirring occasionally, until the beef is tender.

Step 9

In a small bowl, mix the cornstarch and water to create a slurry.

Step 10

Once the beef is tender, uncover and slowly stir in the cornstarch mixture. Increase the heat to medium and allow the gravy to thicken while continuing to stir gently, about 3-5 minutes.

Step 11

Taste and adjust seasoning if necessary.

Step 12

Remove from heat and garnish with chopped fresh parsley before serving.

Step 13

Serve the beef tips and gravy over mashed potatoes, rice, or egg noodles for a complete meal.
