Ingredients

  • 300 grams lean ground beef
  • 1 teaspoon olive oil
  • 2 tablespoons taco seasoning
  • 4 cups romaine lettuce
  • 1 cup cherry tomatoes
  • 1 cup canned black beans
  • 1 cup corn kernels
  • 0.5 red onion
  • 0.5 cup low-fat cheddar cheese
  • 0.5 cup salsa
  • 0.25 cup non-fat Greek yogurt
  • 0.25 cup fresh cilantro
  • 1 lime

Directions

Step 1

Heat olive oil in a large skillet over medium heat. Add the lean ground beef and cook until browned and cooked through, about 5-7 minutes.

Drain any excess fat from the skillet, then add taco seasoning and 1/4 cup of water. Stir well and let simmer for 2-3 minutes until the beef is well-coated and the water has mostly evaporated. Remove from heat and set aside.
