  • 1 medium Zucchini
  • 1 large Red onion
  • 1 pint Cherry tomatoes
  • 0.25 cup Low-sodium soy sauce
  • 2 tablespoons Lemon juice
  • 1 tablespoon Olive oil
  • 3 cloves Garlic
  • 0.5 teaspoon Ground black pepper
  • 1 teaspoon Dried oregano
  • 2 tablespoons Fresh parsley

Directions

Step 1

Core the red bell pepper and cut it into 1-inch pieces.

Step 3

Slice the zucchini into thick rounds.

Peel and quarter the red onion, then separate into layers.

Step 5

In a large bowl, prepare the marinade by combining the low-sodium soy sauce, lemon juice, olive oil, minced garlic, ground black pepper, and dried oregano.

Add the beef cubes to the marinade and toss to coat evenly. Cover and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.

Step 10

Garnish the cooked kabobs with freshly chopped parsley before serving.

Step 11

Serve the kabobs hot with a side of your choice and enjoy your healthy, low-fat meal.
