Ingredients

  • 500 grams lean ground beef
  • 1 sheet whole wheat puff pastry
  • 1 medium onion
  • 2 garlic cloves
  • 1 large carrot
  • 2 tablespoons fresh parsley
  • 1 tablespoon whole grain mustard
  • 1 egg
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 teaspoon olive oil
  • 1 optional for glazing egg yolk

Directions

Step 1

Preheat your oven to 200°C (400°F) and line a baking sheet with parchment paper.

Step 2

Finely dice the onion and garlic. Grate the carrot and chop the parsley.

Step 3

Heat the olive oil in a skillet over medium heat. Add the onion and garlic, sauté until the onion is translucent, about 3-4 minutes.

Step 4

In a large mixing bowl, combine the ground beef, cooked onion and garlic, grated carrot, parsley, and mustard. Season with salt and black pepper.

Step 5

Crack the egg into the mixture and combine well using your hands or a spatula until all ingredients are thoroughly mixed.

Lay the whole wheat puff pastry sheet on a flat surface and cut it in half lengthwise.

Step 7

Divide the beef mixture into two equal portions. Shape each portion into a long log along one edge of each pastry sheet.

Carefully roll the pastry over the beef mixture, sealing the edge with a little water, pressing down gently to secure.

If using, beat the egg yolk and brush it over the top of the rolls for a golden finish.

Cut each roll into four equal-sized pieces, making a total of eight mini rolls.

Place the sausage rolls onto the prepared baking sheet, spaced evenly.

Bake in the preheated oven for 20-25 minutes, or until the pastry is golden and the beef is cooked through.
