Ingredients

  • 500 grams lean beef mince
  • 1 tablespoon olive oil
  • 1 medium, chopped onion
  • 3 cloves, minced garlic
  • 1 medium, chopped red bell pepper
  • 1 medium, chopped green bell pepper
  • 400 grams canned diced tomatoes
  • 400 grams, drained and rinsed canned kidney beans
  • 250 milliliters beef stock
  • 2 tablespoons tomato paste
  • 2 teaspoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon ground paprika
  • 1 teaspoon dried oregano
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons, chopped fresh cilantro
  • 1 juiced lime

Directions

Step 1

Heat the olive oil in a large pot over medium heat.

Step 2

Add the chopped onion and cook until softened, about 5 minutes.

Step 3

Stir in the minced garlic and cook for an additional minute until fragrant.

Step 4

Add the lean beef mince to the pot, breaking it apart with a wooden spoon, and cook until browned, about 5-7 minutes.

Stir in the chopped red and green bell peppers, and cook for another 5 minutes until slightly softened.
