  • 500 grams lean beef stew meat
  • 1 tablespoon olive oil
  • 1 medium onion
  • 2 medium carrots
  • 2 stalks celery stalks
  • 2 cloves garlic
  • 1 medium red bell pepper
  • 3 medium potatoes
  • 750 milliliters low-sodium beef broth
  • 2 tablespoons tomato paste
  • 1 leaf bay leaf
  • 1 teaspoon dried thyme
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 150 grams frozen peas

Directions

Step 1

Dice the onion, slice the carrots and celery, and mince the garlic. Chop the red bell pepper and potatoes into bite-sized pieces.

Step 2

Heat the olive oil in a large pot over medium-high heat. Add the beef and sear until browned on all sides, about 5 minutes. Remove the beef from the pot and set it aside.

In the same pot, add the onion, carrots, and celery. Cook until the onion begins to soften, about 5 minutes.
